My usual homemade porridge is made with raisins or dates. I tried making porridge with dried apricots the other morning and it turned out delicious. Both my bambinos munched this porridge down and it has now become a regular item on the menu in our house.
My baby bambino has just started solids so I whizzed her portion with a hand held blender to make the texture a bit more smooth. Apricots are naturally very sweet so you don’t need to add sugar or honey. This breakfast is very healthy and great for adults too. Porridge always keeps me full for ages, so I find I snack a lot less in the morning and can stretch to lunchtime. The quantities below make enough for my toddler and a small portion for my baby.

Cook Time: 5 mins
- 30g rolled or old fashioned oats
- 250ml whole milk
- 4 dried and pitted apricots, finely chopped
- Add all the ingredients to a small pan, bring to a boil then simmer for approximately 5 mins. Stir frequently to prevent sticking to the base of the pan.
- Serve warm.
